Sriracha Love-fest

Been a while since I gushed on about how wonderful Sriracha is. Ran into this the other day whilst perusing the Cook It Frozen iPhone app, courtesy the Alaska Seafood Marketing Institute.

Not it’s humanly possible to make anything simpler. Boiling water, I guess. But this is right up there with boiling water, falling off a horse, yada yada blah blah blah.

Sriracha + cilantro + lime juice + (mayo or olive oil or a mix thereof)

Give it a whirl in a food processor, then spread over the salmon.

Bake or grill.

Feast.

Serve as a straight-up fillet, or, maybe, I’m thinking, slice into thin strips and serve as a bành mí – style sammich.

Salmon with Thai Chili Mayo Spread

About ½ cup mayo
or
2 Tbs olive oil (or 1 Tb evoo + 1 Tbs sesame oil)
or
¼ cup mayo + 1 Tbs olive oil

1-2 Tbs Sriracha
1-2 tsp lime juice
¼ cup finely chopped cilantro
dash of salt

Heat oven to 375°.

Mix in a small bowl. Or, if you don’t want to chop the cilantro, pulse it all in a food processor until uniformly combined.

Rinse any ice glaze from your frozen salmon, then pat dry with a paper towel. Place the salmon on a baking sheet lined with non-stick foil. Spread the Sriracha mix on each piece of fish, then bake just until the fish is opaque throughout — about 20 minutes for frozen fish, 10-15 for fresh.

    I saw a Srichacha cookbook over a Amazon, but honestly I think the cook thing about Srichacha is that no recipe is really required to incorporate it into a recipe.

    I am a huge fan of the “cook it frozen” cooking but I have not had that sauce so I will have to add it next time I have fish. I am one of the few who like cilantro. I would like to get the app for my phone, do you like it? But I first need to update some stuff on the phone before I can. Grrr. Great idea on the grapefruit spoon and using it to cone out the cupcake. I used a little knife then a baby spoon to fill it with caramel but the grapefruit spoon would make a better well. Thanks for the tip! A few more liked the idea as well.

  8. Yeah, sriracha is a favorite in out house as well. I love to add it to guacamole or corn salsa to spice them up! It also does wonders for split-pea soup.
